Try these yummy potato fritters! Make a big bash for gameday and use a spicy chili sauce for dipping.

These potato fritters are made with Yukon potatoes and a choux pastry which produces a crispy outer shell and creamy potato center. Serve with the spicy chili - mayo sauce, recipe below.

Pommes Dauphine

Ingredients:

  • 7-8 Yukon gold potatoes, peeled & quartered
  • 1 C. Flour
  • 1 C. Water
  • 5 T. Butter
  • 1 t. Salt
  • 1 t. Cracked black pepper
  • 4 Eggs
  • 2 C. Vegetable oil

Directions:

  1. Boil the potatoes in a pot of salted water.
  2. When the potatoes are tender, after about 20 minutes, drain them and break them up with a fork. Let them cool on the countertop for later.
  3. Combine the butter, salt, pepper, and water in a medium sized pot and simmer over medium heat.
  4. Remove the mixture from the heat and add the flour, stir with a wooden spoon vigorously until combined and the dough pulls away from the pot. Return the dough to the burner while continuing to beat it for 1 minute.
  5. Remove the dough from the heat and put it into an electric mixing bowl. Let the dough cool for a few minutes. Affix a paddle attachment to the mixer, and on a low speed, beat the dough. Add the first egg. When the dough has absorbed the egg and again begins pulling away from the sides of the bowl, add another until all four of the eggs have been used.
  6. Add the potatoes to the dough and beat together until combined.
  7. Heat the vegetable oil in a small pot until it reaches 340?. You may not need to use all of the oil, just ensure that the oil reaches a height of at least 3 inches in the pot.
  8. Form the dough into 1 1/2 inch balls and fry in the hot oil for 3-4 minutes until all sides are golden brown.
  9. Remove the potatoes to a liberally salted baking sheet and place in the oven until all of the potatoes are done.

Spicy Chili - Mayo Sauce

Ingredients:

  • 1 Tablespoon of bottled Sriracha sauce
  • 1 1/2 cup of mayonaise
  • 1 lemon, juiced
  • cilantro

Directions:

  1. In a small bowl whisk together the tablespoon of bottled sriracha sauce, mayonaise and lemon juice.
  2. Season with salt and pepper and sir in the cilantro.
  3. If you'd like a more toned down version, add less sriracha sauce and more lemon juice.

You can also make a meal out of Pommes Dauphine, just serve with a broiled steak and a steamed vegetable.
